Trinity Hill Hawkes Bay Syrah from New Zealand's Hawkes Bay region is a vibrant Red (Rouge) still, dry wine, expertly crafted from Syrah grapes. This wine undergoes a meticulous vinification process, including separate parcel harvesting, destemming, gentle daily pumping over during fermentation, and extended skin maceration for tannin integration. It then matures for eight months in French oak and stainless steel, retaining a vibrant fruit profile. Expect enticing aromas of wild raspberries, blackberry, liquorice, and pepper. The palate reveals supple tannins, crisp acidity, and a hint of toasty oak, leading to a lingering, spicy finish. A superb choice for pairing with roasted lamb, game, or mature cheeses.

Each individual vineyard parcel was harvested separately with the majority of batches then destemmed prior to fermentation. Gentle daily pumping over of the skins during fermentation helped extract a soft, complex structure. The skin maceration was extended for up to three weeks following fermentation to further integrate and soften the tannins. The individual components were blended following eight months of maturation in a combination of used French oak barriques and stainless steel tanks.

Serve at 16-18°C. Decant for 30-60 minutes to allow its vibrant fruit and spice to open up.
