Santiago Ruiz `O Rosal` Rías Baixas DO from Rías Baixas, O Rosal, Spain, is a vibrant still white (Galician white) wine. This dry blend of Albariño, Godello, Loureiro, Treixadura, and Caíño Blanco grapes undergoes separate vinification in stainless steel tanks with cryo-maceration, followed by four months of lees ageing to develop its distinctive style. It offers striking floral aromas alongside bright notes of apple, apricot, and ripe lemon, complemented by subtle herbal undertones. The elegant palate delivers fresh fruit flavours balanced by a distinctive stony minerality, leading to a clean and refreshing finish. This versatile wine pairs beautifully with lean fish, shellfish, or vegetarian dishes. It is also suitable for vegans and vegetarians.

The grapes were hand harvested by variety using 20kg crates, followed by a hand selection process on sorting tables upon arrival at the winery. Each variety underwent cryo-maceration and was fermented separately in stainless steel tanks at a controlled temperature. Each variety was vinified separately and, after four months of lees ageing, the blend was carefully assembled to produce the distinctive Santiago Ruiz style.
