Fermented in open top fermenters and matured for nine months in French oak puncheons, it offers a juicy palate with well-integrated, firm tannins that lead to a rich and spicy finish. This vegan and vegetarian-friendly wine pairs beautifully with robust dishes such as beef, lamb, cured meats, or mature hard cheeses.

Both batches were fermented in open top fermenters and left on skins for a total of 11 days. Blending took place before maturation for nine months in French oak puncheons.
