Vinification
The grapes were carefully selected in the vineyards and harvested by hand into small crates. The destemmed and lightly crushed grapes underwent a cool pre-fermentation maceration on the skins at 10°C for 3 days to extract maximum aromatics, followed by fermentation for 12 days at temperatures increasing gradually from 12 to 23°C in stainless steel tanks. The wine was transferred to second and third fill oak barrels for six months, resulting in smooth tannins.
