Kaiken Ultra from Mendoza, Luján de Cuyo, Vistalba, Argentina, is a superb Red still dry wine crafted from 100% Cabernet Sauvignon. The grapes are hand-picked from 80-year-old vines and fermented in concrete tanks before ageing for 12 months in French oak barrels, with one-third new oak. This vegan and vegetarian-friendly wine offers distinct aromas of plum and clove, leading to an intense palate of dark fruit notes, complemented by nuances of pepper and spices from its oak maturation. Elegant yet complex, it boasts ripe tannins and a lingering finish, making it a versatile partner for roasted meats or mature cheeses.

The fruit was hand picked and then sorted manually in the winery. The must was cold soaked for seven days at 10°C before fermentation in concrete tanks at controlled temperatures of 26°C using selected and native yeasts. Fermentation took seven days with post-fermentation maceration lasting another three weeks. The wine underwent spontaneous malolactic fermentation in tank before being transferred to French oak barrels (one third of which were new) for 12 months. It was then aged for a further six months in bottle prior to release.
This elegant Cabernet Sauvignon offers distinct aromas of plum and clove, leading to an intense palate of dark fruit notes. Nuances of pepper and spices from oak ageing complement the ripe tannins, culminating in a complex and lingering finish.
Serve at 16-18°C. Decant for an hour to allow its complex aromas to unfold.
