The palate is vibrant and lively, offering a beautiful expression of fruit complemented by fine-grained tannins and a long, satisfying finish. This elegant wine is a versatile choice, pairing beautifully with roasted beef, lamb, game, or mature cheeses, making it perfect for a special meal.

Vinification

The grapes were hand-harvested in late September to ensure optimal selection and quality. The fruit underwent partial destemming before fermentation, with 20% retained as whole clusters to enhance aromatic complexity and structural depth. Fermentation proceeded on the skins for 14 days, allowing for careful extraction of colour, tannins, and flavour compounds. Following fermentation, the wine was aged in 2000-liter used oak barrels for 11 months, providing gentle integration and maturation without overwhelming the fruit character.
