Dandelion Vineyards `Lionheart of the Barossa` from Barossa, Australia is a classic still Red (Shiraz) wine. This dry Shiraz undergoes natural fermentation in open top fermenters and matures for 18 months in French oak, developing intense notes of rosemary, dark chocolate, ripe plums, and white pepper, beautifully integrated with oak undertones. The palate offers great depth, wonderful acidity, and fine tannins. This vegan and vegetarian-friendly wine is a versatile choice, pairing excellently with roasted meats or mature cheeses.

In the third week of March, whole bunches of Shiraz were hand harvested before undergoing a gentle crush. Natural fermentation took place in open top fermenters for eight days where the must was hand plunged twice a day. Following this, the must underwent a careful basket pressing into some new, but predominantly older, French oak barriques to finish fermentation. Maturation took place in the same oak, lasting 18 months before bottling.
This classic Barossa Shiraz opens with intense aromas of dark chocolate, ripe plums, and a hint of white pepper, beautifully integrated with subtle oak. The palate is deep and rich, balanced by wonderful acidity and fine tannins, leading to a complex and satisfying finish.
Serve at 16-18°C. Decant for an hour to allow its complex aromas to unfold.
