Corte Giara Valpolicella Ripasso Valpolicella DOC, Italy, is a superb still red wine crafted using the traditional Veronese “Ripasso” technique. This dry wine offers pronounced aromas of black cherry, cranberry, and black pepper, intertwined with smoky spice and toasted notes. The palate is rounded and full-bodied, showcasing excellent structure and vibrant acidity, delivering a harmonious and vivacious experience. Aged for 11 months in large Slavonian oak barrels, it develops depth and complexity. This versatile red pairs wonderfully with rich pasta dishes, roasted meats, or mature cheeses.

This wine was made using the traditional Veronese “Ripasso” technique. The grapes were destemmed and gently crushed before being fermented in temperature controlled stainless-steel tanks, with daily pumping over. A second fermentation was started by adding Amarone pomace to the must, to add body and depth, continuing for eight to ten days. The wine was aged for four months in stainless-steel tanks, and then in large Slavonian oak barrels for 11 months prior to bottling.
This Valpolicella Ripasso offers a rich and inviting bouquet of pronounced black cherry, cranberry, and black pepper, complemented by smoky spice and toasted notes. On the palate, it is rounded and full-bodied, revealing harmonious flavours of dark fruits, plum, and a hint of baking spices, all balanced by vibrant acidity.
Serve at 16-18°C; decanting for 30 minutes will enhance its complexity and aromas.
