Clos des Fous `Grillos Cantores` Alto Cachapoal DO, Chile, is a still Red wine crafted from 100% Cabernet Sauvignon. This dry wine undergoes a meticulous vinification process, including cold maceration and gentle punch-downs, followed by 18 months of ageing partially in wood and cement vessels. It presents an intense nose of red fruits, black cherries, spice, black pepper, and green tea, leading to a silky, generous palate with soft tannins, excellent acidity, and distinct minerality. A versatile choice, it pairs wonderfully with roasted meats or mature cheeses.

The grapes were destemmed without crushing and underwent cold maceration for five to seven days with the temperature gradually increasing as the fermentation took place. Gentle punch-downs of the cap took place as required to extract colour and tannin. The total process, including a post-fermentation maceration, took approximately four weeks. The wine was aged partially in wood and partially in cement vessels for 18 months.
This Chilean Cabernet Sauvignon offers an intense aromatic profile of red fruits and black cherries, complemented by hints of spice, black pepper, and green tea. On the palate, it is silky and generous, showcasing soft tannins, excellent acidity, and a subtle mineral character that leads to an elegant finish.
Serve at 16-18°C; decant for an hour to enhance its complex aromas.
