Casa Castillo Monastrell Jumilla DOP from Jumilla, Spain, is an elegant and youthful dry Red wine crafted primarily from Monastrell and Garnacha grapes. Fermented in stainless steel with indigenous yeasts and aged in concrete and old French oak, it offers vibrant aromas of cherry and raspberry. The palate reveals concentrated flavours of black pepper, baking spices, and Mediterranean herbs, leading to a fresh, lingering finish. This certified organic, vegan, and vegetarian wine pairs wonderfully with roasted meats or mature cheeses.

The grapes were hand harvested, 100% destemmed and then fermented in stainless steel using indigenous yeasts. Gentle maceration took place at temperatures between 30 - 32°C, for between 12-14 days. Malolactic fermentation took place in small foudres, before the wine was aged for between 8-10 months in neutral 500L French oak barrels and foudres.
This elegant and youthful red wine offers a vibrant aromatic profile of ripe red fruits like cherry and raspberry. On the palate, it reveals a concentrated core of fruit complemented by spicy notes of black pepper and baking spices, with a fresh, lingering finish.
Serve at 16-18°C, ideally decanted for an hour to allow its complex aromas to unfold.
