Cantina Valpantena `Torre del Falasco` Valpolicella Superiore Ripasso, Valpolicella, Italy. This still Red wine, crafted primarily from Corvina and Corvinone grapes, is a dry and full-bodied expression. It undergoes a traditional 'ripasso' method, involving a second fermentation on Amarone skins, which imparts a unique depth. On the nose, it reveals aromas of dried cherry, dark plums, mocha, and dark chocolate. The palate is powerful and full-bodied, showcasing spiced fruit, supportive tannins, and layers of raisin, candied peel, and ripe cherry, culminating in a long finish with spicy nutmeg notes. This complex wine pairs wonderfully with rich pasta dishes, roasted meats, or mature cheeses.

After the grapes were dry, they were destemmed and crushed, then fermented in temperature-controlled, stainless-steel tanks at 22-28°C. Maceration lasted 10 days. Once fermentation was complete, a second fermentation took place on the skins of the Torre del Falasco Amarone in the traditional 'ripasso' method. The wine was then filtered and clarified before being aged for two years in stainless-steel barrels.
This powerful, full-bodied red wine offers a complex aromatic profile of dried cherry, dark plums, mocha, and dark chocolate. The palate is rich with spiced fruit, supportive tannins, and layers of raisin, candied peel, and ripe cherry, culminating in a long finish with spicy nutmeg notes.
Serve at 16-18°C; decant for 30 minutes to allow its rich character to unfold.
