Vinification

`Le Pole` hails from vineyards surrounding Nizza at 200 - 300 metres above sea level, planted on a mixture of calcareous clays and marls. Handpicked in the second half of September, the grapes are transported to and crushed at the co-op. Fermentation lasts no longer than ten days, at a maximum temperature of 28ºC. Malolactic fermentation starts straight after alcoholic fermentation is completed. After a few months, the wine is ready for early bottling, preserving the vibrancy of Barbera at its best.
