Cantina di Gambellara Monopolio Gambellara Classico from Gambellara, Italy, is a superb White still dry wine crafted from Garganega grapes. The grapes undergo brief maceration before fermenting at low temperatures in stainless steel, with the wine resting on its lees for three to four months. This process yields a dry and complex wine, displaying pronounced minerality, yellow peach aromas, and a touch of spice, leading to a long, satisfying finish. It is a versatile choice, pairing beautifully with lean fish, shellfish, and vegetarian dishes. This wine is also suitable for vegans and vegetarians.

The grapes were destemmed, followed by a brief maceration at around 10°C. After a gentle crush, fermentation took place in temperature-controlled stainless steel tanks at 14-16°C. The wine remained on its lees for three to four months.
