Can Sumoi Xarel·lo from Costers del Montmell, Spain, is a captivating still white wine crafted from the region's prized Xarel·lo grape. This dry wine offers a complex and textured profile, revealing soft herbal aromatics alongside notes of aniseed and Mediterranean herbs. Vinified using indigenous yeasts in a blend of cement and stainless steel tanks, with spontaneous malolactic fermentation and minimal sulphur, it embodies a natural approach. The palate is refreshing with bright acidity and a delicate saline character. Certified organic, vegan, and vegetarian, it pairs beautifully with lean fish, shellfish, or vegetarian dishes.

All Can Sumoi wines are produced following the 'Vin Méthode Nature` regulations, resulting in no more than 30mg/L of sulphites in total. The grapes were handpicked and destemmed. After soft treading, the grapes were gently pressed before fermentation took place using indigenous yeast in 20% cement tanks and 80% stainless steel tanks at 18°C. Fermentation lasted 18 days before spontaneous malolactic fermentation took place. The wine was bottled in December following brief ageing in stainless steel tanks.
