Baron de Badassière Sauvignon Blanc Côtes de Thau IGP from Côtes de Thau, France, is a crisp, dry White still wine crafted entirely from Sauvignon Blanc grapes. The vinification process involves several hours of skin contact and a cool 15°C fermentation to maximise flavour and preserve fresh fruit characteristics, with no malolactic fermentation or oak ageing ensuring a pure, aromatic style. It offers lifted citrus and elderflower aromas, leading to a racy palate of apple, lemon, and stone fruit with a refreshing, long finish. This versatile wine is perfect with lean fish or vegetarian dishes. It is also suitable for vegans and vegetarians.

The grapes were pressed in a pneumatic press and underwent several hours of skin contact prior to fermentation in order to maximise flavour extraction from the aromatic Sauvignon Blanc grapes. A cool fermentation at 15°C helped to preserve the fresh fruit flavours. The wine did not undergo malolactic fermentation and there was no oak ageing. As a result, the style of the wine is pure, fresh and aromatic.
This crisp Sauvignon Blanc offers vibrant aromas of citrus and elderflower, leading to a racy palate bursting with refreshing notes of apple, lemon, and stone fruit, culminating in a long, clean finish.
Serve chilled at 10-12°C to best enjoy its fresh, aromatic profile. No decanting required.
